Matt Ellis
Chief Sip Officer
Fluent in red, white and rosé, and armed with 25+ years in the wine trade, Matt can turn “just one glass” into a full-blown celebration. He pairs wine with anything (yes, even heartburn) and swears the only thing better than a great bottle is the unforgettable story poured alongside it. He’s never met a cork he couldn’t conquer, a swirl he couldn’t exaggerate or a wine pun he didn’t secretly enjoy. And while wine is his mother tongue, Matt also speaks fluent beer: he can explain the difference between an IPA and a stout using only interpretive dance, believes “lager before wine, you’ll be fine,” and insists hops are just grapes with a gym membership. Matt is also know as Tipple Tours' Head of Lost & Found as he is usually the one who gets lost but always finds the next bar.
